Vinny's Sugar Cookies

1 cup Butter, softened

3-ounce package of cream cheese, softened

3/4 cup sugar

1 egg

1 teaspoon vanilla

3 cups all-purpose flour (For Altitude baking, I use Bread Flour)

In a large mixing bowl, combine all cookie ingredients except flour. Beat at medium speed, scraping the bowl often until creamy. Reduce speed to low; add flour. Beat, scraping bowl often, until well mixed. Divide dough into two equal portions; wrap in plastic wrap and refrigerate until firm (at least 2 hours). Heat oven to 350°. Roll out on a lightly floured surface OR parchment paper. Bake for 7 to 10 minutes or until the edges are lightly browned. Remove from cookie sheets; cool completely.
